Hannah Lee was born in Arizona and moved to Killeen, Texas at an early age where she was raised in a Korean household. In order to exemplify the importance in their Korean culture, she was taught to only speak in Korean tongue at home, while she could implement American customs in school and other functions. “I was born and raised here, but without my culture, I couldn’t define who I am,” said Hannah Lee. She was inspired by her parents working for their own business, which gave her the drive to one day run one herself. While in high school, she met Jason Choi, who was studying abroad in the United States from Korea. They instantly connected and became high school sweethearts shortly thereafter.
After attending college, Jason and Hannah Lee married, and soon found a desire to open their own business. With Hannah Lee’s drive and Jason’s passion for cooking, it was a perfect combination to open a restaurant. On a vacation in Mexico, the couple was surrounded by different variations of food, which gave them the idea to potentially inspire original dishes of their own. They decided to introduce a unique combination of fusing together Korean and Mexican style foods, thus introducing Casa Choi to the town of San Marcos.
Casa Choi opened January 3rd, 2019, becoming the first of its kind in the city of San Marcos. The restaurant itself presents a rather laid back atmosphere coupled with warm and inviting people to draw local students to its doors. The dishes are all made from scratch, while tortillas and ingredients are brought in locally. Casa Choi offers extremely reasonably priced foods, as well as a unique taste that will keep its customers wanting more. Mama and Papa Choi are excited for what is to come and see their audience grow, along with the restaurant itself.
